how Meraki began *

Meraki is a one woman show, supported by countless talented women and men who came before me. From growing up baking alongside my mother, to becoming the head baker at Bakery Four in Denver, I’ve learned a lot along the way. My journey started simply as a love for making food with my family, but quickly grew into a passion for the science, creativity, and long hours that go into baking quality product.

I created Meraki in 2021, also from my home kitchen, when I was working at a restaurant in Lexington, Kentucky. I was working as the “pastry chef” there, and many of my regulars would request custom cakes from me, so I created Meraki to fill that need. A year later, I moved to Colorado and put my own business on hold to work at a small bakery called New Moon, and live out my mountain town dreams. A few years later, I met my now husband and moved to Denver to be with him. When looking for a job, my friends suggested I apply at a new bakery on their street. This is where I met Shawn Bergin of Bakery Four. Over the years working alongside Shawn, he instilled confidence in me that is needed to be where I am today, teaching me anything I wanted to know and allowing my creativity to blossom.

With my husbands support, we picked up and moved to the PNW to follow our collective dream of creating a permaculture food forest on our homestead. A year later, I am ready to bring Meraki back to life in this little town that I’m proud to call home!
